Migration Taco is a vegan taco truck.

We also serve nachos, mac & cheese, and burritos — including our world-famous breakfast burrito featuring green chile made with chiles from Hatch, New Mexico.

We make just about everything from scratch.

Our vegan “meats” (seitan carne asada, garbanzo chorizo, seitan wings, and more) and “cheeses” (mozzarella, macadamia cotija, and our famous cheese sauce) are made from scratch, by us. We JUST go Beyond the Impossible (lol) because it’s better that way.
